Boodh Kumblakaayi Huli is a popular dish in Udupi region. Ash gourd is simmered in a freshly ground spice paste and finished off with a mustard seasoning. It is served with white rice. Ash gourd (chopped) - 2 cups Toordal - 1/3 cup Coriander leaves - 5-6 sprigs Curry leaves - 5-6 Jaggery - 1 Tbsp Asafoetida - 1/4 tsp Salt - To taste For Masala: Dry Red chilli - 4 Coriander seeds - 2 Tbsp Urad dal - 2 tsp Cumin Seeds - 1 1/2 tsp Methi seeds - 1/4 tsp Oil- 1 tsp Turmeric powder - 1/4 tsp For Seasoning: Oil - 2 tsp Mustard seeds - 1/2 tsp Urad dal- 1 tsp Dry red chilli - 1
