Mint Chutney Sandwich is a very flavorful sandwich. It comes together quickly if you have some mint chutney stored in your freezer. I always make a big batch of mint chutney and portion them in ice cube tray. Then store them in resealable bags for later use. Whenever required, I pull out few cubes and thaw them. This way making this sandwich is a breeze. The bread slices are toasted and then a good amount of chutney is applied. Layers of veggies are placed between the two toasted bread slices.
