Pickle is a popular condiment in Indian cuisine.Veggies are paired with raw mango in this version. They provide a wonderful crunch. This is one of the recipe my mother used to make every summer.This is a south Indian version and has no oil. The pickle will be ready to use in 2 days. I hope you enjoy making it. Raw mango, chopped - 2 cups Carrot, chopped - 1/4 cup Cauliflower, chopped - 1 cup Dry Red chilli (byadgi) - 16 Mustard seeds - 3 tsp Asafoetida (Hing) - 1/4 tsp Turmeric powder - 1/4 tsp Salt - 1 1/2 Tbsp Water - 1 3/4 to 2 cup
